If you don’t tolerate dairy very well, you will likely come across recipes that call for sour cream and not know what to replace it with. I’ve created this recipe to use for especially those times. It works well in recipes like my White Bean Chicken Chili and Sprouted Wheat Cinnamon Rolls. (Visit our “A Better Weigh to Healthy” Facebook page to see a brief tutorial in making this recipe.)

Ingredients
- 1 cup raw cashews
- 6 tablespoons organic lemon juice
- 1¼ teaspoons nutritional yeast
- ¼ teaspoon sea salt
- ½ cup water
- 1/8 teaspoon xanthan gum
Instructions
- Cover cashews with boiling water and set aside for 1 hour. Rinse and drain.
- Put everything except xanthan gum into a blender and blend until mixture is smooth. Scrape sides often. Slowly sprinkle in the xanthan gum and blend a bit longer.
- Refrigerate.
Note: Use this recipe within 5 days.
