Notes
Prep Note: Use this to replace un-whipped heavy cream.
Ingredients
- 1⁄2 cup raw cashews
- 1⁄2 cup refined coconut oil
- 3⁄4 cup unsweetened cashew milk
- 1⁄4 teaspoon sea salt
- 2 teaspoons sweetener
- 1⁄4 teaspoon xanthan gum
Instructions
- Put everything except xanthan gum into blender and blend well, until mixture is no longer grainy and is very smooth. Scrape sides often.
- Slowly sprinkle in xanthan gum and blend for a bit longer. It will thicken more in refrigerator. Use within 5 days.
