Dairy-free Cauliflower Soup (THM-S)

Creamy. Satisfying. Healthy. Delicious! These are the words that best describe this easy low-carb recipe. Our girls came up with this wonderful soup recipe. My husband called it...gourmet! It was just as good as any potato soup that we've had and MUCH healthier. This recipe makes enough for a large family, but you can easily cut it in half for a smaller amount. There again, it's so good that you may want to freeze some for a quick meal later on.
I'm sure this is one of those soups that we will make a lot, because...well, you just need to see for yourself how good it really is!

Ingredients
- 4 tbsp butter (for dairy-free...use olive oil)
- 1-2 carrots chopped (optional)
- 2 onions diced
- 4 garlic cloves minced
- 2 heads cauliflower chopped
- 2 bay leaves
- 1/2 C. almond flour
- 8 C. chicken broth
- 2 C. almond milk
- 2 pounds sausage fried (We used turkey "sausage.")
- salt to taste
- pepper to taste
- 1 t. cayenne pepper (optional)
- 2-3 t. nutritional yeast (optional)
Instructions
- Saute' garlic, onions, and carrots until mostly tender.
- Stir in cauliflower and bay leaves and cook, stirring occasionally until very soft.
- Whisk in flour, then gradually add chicken broth and milk and bring to a boil. Add ground and fried turkey and reduce heat. Simmer until it is hot (about 12-15 min.) and add the rest of the ingredients and salt and pepper to taste.
