Ingredients
- 1½ cups raw cashews
- ¼ cup refined liquid coconut oil
- 2/3 cup blanched almond flour
- 2/3 cup shredded unsweetened
- coconut
- ½ cup powdered sweetener
- ¼ teaspoon sea salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 2 tablespoons water
- 1 cup fruit sweetened cranberries*
Instructions
- 1. Cover cashews with boiling water and let set for a least 15 minutes. Drain well.
- 2. Blend cashews into a smooth paste, scraping sides often. Add oil and blend again until very
- smooth.
- 3. In a bowl, combine cashew paste with remaining ingredients except cranberries. Mix together into
- a dough, then stir in cranberries.
- 4. Refrigerate until cold, then shape into small balls.
*p r e p n o t e : The cranberries are delightful in here, but you could replace them with sugar-free chocolate chips.
